It’s time for the first “What’s Up Wednesday” of 2017!
1. What We’re Eating This Week…
We started the new year determined we were going to cut back on eating out. You guys, we were eating out WAY too much. Not only is that bad for our waistline, but we were spending a ridiculous amount of money.
The truth is, I’m not a fan of cooking. I want simple meals that don’t take a lot of time.
This week we’re eating a go-to meal that never disappoints. My super easy Chicken Spaghetti!
Here’s a quick rundown of the recipe: Boil a package of spaghetti noodles and drain. Return the noodles to the pot and dump the following ingredients in: a can of cream of mushroom soup, a can of cream of chicken soup, a can of Rotel, a can of (drained) black olives, a can of (drained) all white meat chicken and one cup of shredded cheddar cheese. Mix together.
Dump the mixture in a 19×13 baking dish and top with shredded cheddar cheese.
Bake for 45 minutes to one hour on 350!

2. What I’m Reminiscing About…
I catch myself replaying events of our day – things Jackson did and said – because he’s talking up a storm and his personality is pretty much amazing! He has an incredible sense of humor and overflows with joy.
The other night he was running around in his boxers and a superman cape.
He said, Dad, stand up! Be Batman!
Be still my heart!
I never want to forget these precious moments!
3. What’ I’m Loving…
My new Kindle Fire! After borrowing John’s to read a couple of books that he had already purchased, I wanted my own! He bought me a hot pink one as an early birthday present! While I still love to have a book in my hands, this little device is going to be super handy when we’re traveling!
4. What We’ve Been Up To…
I think we’re still in recovery mode from the holidays. I don’t know about you, but I was glad for things to get back to normal. Schedules are my friend! Our weekends have been laid back and relaxing. We’re getting back in the groove of going to church (because we were complete slackers during the holidays). Weekends have been about family time, naps and trips to the movie theater. I love our weekends and look forward to them all week long!
5. What I’m Dreading…
Packing up an entire house and moving. Yes, it’s most likely happening this Spring. I’m super excited about where we’re moving and I know we are making the best decision for Jackson, but good golly, the actual packing and moving intimidates me.
6. What I’m Working On…
This year I’m working on believing that I matter regardless of what I accomplish. I’m working on finding my worth in Jesus alone. I’m reading books because I love to read, not because I’m trying to break some reading record. I’m writing because it’s ingrained in me. It’s my offering. I’m embracing motherhood because before I know it I’ll blink and this precious season will be over.
7. What I’m Excited About…
My birthday is less than a month away! I’m a big fan of birthdays; keep reading for details about a fun birthday giveaway that will be happening here on the blog!
8. What I’m Watching/Reading…
Last weekend I saw the movie Hidden Figures. You guys, if you haven’t seen it you need to RUN to the nearest theater! It was phenomenal! It was such an inspirational and heartwarming story; much needed after weeks of hate and garbage being spewed all over social media. The entire audience burst out into applause at the end.
I’ve been anxiously awaiting the release of Different: The Story of an Outside-the-Box Kid and the Mom Who Loved Him By Sally and Nathan Clarkson. It arrived in my mailbox yesterday and I started reading immediately. I can’t wait to share more about the book when I’m finished!
9. What I’m Listening To…
Adoptive mamas, have you heard of this CD?
I am in LOVE with the song I’m Adopted.
Jackson and I have been listening to this CD while having dance parties in his room. It’s the perfect way for a five-year-old to burn off all that extra energy!
Every song by Slugs & Bugs is fun and silly and many are about Jesus!
I can’t wait to add a few more of their CD’s to our collection!
10. What I’m Wearing…
I finally got on the Kendra Scott bandwagon! John bought me a necklace and earrings for Christmas and I love them so much! I’m not much of a jewelry/accessories girl. I usually wear my wedding ring and diamond studs (both from John) and nothing else. I love the Kendra Scott set because I can wear it when I’m all dressed up or when I’m in a flannel shirt and jeans!
11. What I’m Doing this Weekend…
Jackson has a friend’s birthday party to attend. I’m excited that it’s going to be at a gymnastics place where he can burn some energy! Birthday parties aren’t always easy for us, but this one should be pretty laid back since there will be plenty to keep him busy!
12. What I’m Looking Forward to Next Month…
I’ll host my 5th Annual Favorite Things Party in honor of my 35th Birthday! I’ll also host an online party where one lucky blog reader will win a box of my favorite things! It’s so much fun! I’ve already purchased my gifts and can’t wait to spend the weekend celebrating with my sister, cousins and friends! To read about last year’s giveaway, click here.

14. Who’s Been Your Favorite Bachelor?
I think my favorite bachelor goes way back to Bob! There was something about his season that I just adored. I was team Kelly Jo all the way, so I was totally bummed when she didn’t end up with the final rose. I don’t watch the show much anymore, but have fun memories of Bob’s season!
